Any good Quinoa recipes?

Since Quinoa is so high in protein I thought I would try making some. I have had salads and pilaf that I like but don't have a recipe for them?

I'm going to use cooked Quinoa in place of bread for my stuffing for Thanksgiving.
There is another thread on this board with some recipes.

I make stuffing the way my mother and her mother made it.
I use the sausage that comes in a roll. Cook it until it is done, put it thru the old fashioned chopper, drain the grease, put in a stick of butter then add chopped onions and celery. When the onions and celery is soft I mix it with the sausage and bread that I've put thru the chopper. At this point I add lots of fresh parsley and a juicy type of apple, parsley and apple go thru the chopper too. Mix everything and add sage and salt. I don't like pepper in it though. So this year I will do everything the same except for myself I'll mix everything with the Quinoa instead of the bread.

hi Cheryl,

Quinoa is considered a "super food" because its a grain and high in protein.  I love it and use it all the time in place of rice, but its very similar to couscous.  Recently I used it in stuffed cabbage (instead of the rice) and it came out great!

here are 3 of my favorite recipes  - quinoa and black bean salad, great way to get extra protein in!

Thank you so much. I like quinoa and sometimes eat it with eggs. The lst recipe I tried didn't turn out so well. I will be trying these. I really like the salad at whole foods.
